Chilisco is a local family-owned business that was started by two friends that brought two Mexican state recipes and authentic food together. The taco truck Chilisco was named by the first three letters of the state of Chihuahua and the last five letters of the state of Jalisco. Running the business is truly a team effort by Arturo Rodriguez, Gilberto Rodrigo, Berny, Aracely, Alicia, and several nieces and nephews.
Our most requested food item is our beer battered fish taco followed by our birria (Jalisco-style braised meat with spiced multiple-chile sauce) tacos and mulitas, a melted cheesy mini-quesadilla stuffed with birria. Other favorites include our traditional tacos with cilantro, onions, salsa, and your choice of meat such as carne azada, adobada, chicken, chorizo, pastor, and fish. We also have our hefty handmade corn quesadillas and huaraches if your extra hungry.
Currently, Chilisco focuses on feeding industrial and construction workers at multiple sites near King City during the week. They can also be found satisfying the hunger of attendees at Hanford High School football games, softball tournaments, and other school events.
